For a non veg lover that I am, Bhurji has always been with eggs and my all time favourite breakfast specially Bhurji Pav But its always good to explore your taste buds which I do.
I do for a change make Paneer Bhurji which taste equally good as Egg Bhurji infact I think much better than Egg Bhurji.
Its very simple to make yet very delicious breakfast recipe, So lets try the simple Paneer Bhurji recipe today and enjoy it with Bread/Pav/ Garma Garam Rotis.

  • Kadhai or Bottom Pan

Ingredients
  

  • 200 grams Grated Paneer/Cottage Cheese
  • 2 Nos Finely Chopped Onions
  • 2-3 Nos Green Chillies Chopped
  • 1/2 tsp Ginger Garlic paste
  • 1/4 tsp Garam Masala
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Red Chilly Powder
  • Chopped Coriander Leaves
  • Salt as per taste
  • Oil for Cooking

  • Heat a pan and add about 1-2 tbsp of Oil and add some Jeera or Cumin seeds and let them crackle

  • Then add chopped green chillies and finely sliced onions and fry them until translucent

  • Once the onions are pinkish or translucent add 1/2 tsp ginger garlic paste, stir it and fry until the raw smell is gone.

  • Add finely chopped tomatoes and salt, cover it with a lid and cook them for 2-3 mins or until soft and mushy

  • Now add red chilly powder, turmeric and garam masala powder and fry them until aromatic

  • Finally add shredded or grated Paneer and mix it thoroughly

  • Cover it and cook for 2-3 mins on low flame

  • After 2-3 mins, check and dry up any extra water released from the Paneer

  • Garnish it with some freshly chopped coriander leaves

  • Delicious Paneer Bhurji is ready to be served

Notes

Do not over cook the paneer or else it will turn rubbery
Grate the paneer using a grater or you can even mash it with hands
