I have many memories primarily related to food from my childhood. Hence I always keep sharing my experiences and life stories about my food habits and how Mom used to try to make us happy by making tasty foodstuffs with limited resources.

When we crave something sweet and ask Mom to make kheer or another lovely dish, she always enters the kitchen, and within 15-20 minutes, she prepares a delicious and delightful Phirni recipe. I once asked her how she makes it so quickly, and she told me that she uses leftover rice, mixes it with milk and sugar, and adds a special ingredient – her love. Despite the recipe’s simplicity, it tastes incredible, and I still remember the flavour.

Phirni Recipe | Rice pudding Recipe.

Today's recipe is simple "Phirni" recipe made with leftover rice, for this recipe we need Cooked Rice, Sugar, Milk and Cardamom Powder and some dry fruits for garnishing.
Milk is boiled along with coarsely grinded rice and cooked until its reduced to half and mixed with sugar and cardamom powder and finally garnished with some dry fruits. Hope you all love this recipe and do try and share your feedback with us.

Ingredients

  • 500 ml Milk
  • 1 Cup Cooked Rice (Basmati/Regular)
  • 1/2 Cup Sugar or as per taste
  • 1/2 tbsp Cardamom Powder
  • 1/4 Cup Chopped Dry Fruits
  • 2 tbsp Ghee
  • Saffron Strands (Optional)

Instructions

  • Coarsely grind the cooked rice along with half cup milk , DO NOT make a fine paste
    Pulse it in the mixer jar for 2-3 times

  • Heat the milk in a bottom vessel and let it boil

  • Now add coarsely grinded rice in the milk and let it boil and cook it for 10-15 mins until the milk is reduced to half.

  • Keep stirring it continuously until it boils

  • Once it starts boiling add sugar and mix it thoroughly and let it boil on low-medium flame until reduced to half of the quantity.

  • Add some saffron strands, this is optional. You may add this only if available.

  • The milk is reduced to half and cooked for 10-15 mins on low flame

  • Now add some cardamom powder and mix it well

  • Then goes in the chopped dry fruits

  • Mix it well and cook for another 4-5 minutes

  • Finally garnish it with some desi ghee and give it a good mix

You may even add Khoya to make it rich and creamy or instead we can add condensed milk too to add to the richness
Milk has to be boiled and reduced to half of the quantity
You may use Basmati Rice too for enhance the taste
