First, marinate the chicken chunks and make sure they are dry before proceeding.
Add around one tablespoon of ginger garlic paste to the chicken.
Season the chicken, including the dry masala, such as coriander powder, black pepper powder, red chilli, turmeric, cumin seed powder, and garam masala.
Next, add salt to your desired taste.
Lastly, add lemon juice.
Mix everything thoroughly to ensure that the masala is evenly spread across all chicken pieces.
Next, grab the skewer sticks and thread 3-4 pieces of chicken onto each one.
Follow these steps to marinate all of the chicken pieces.
After preparing all the chicken pieces, kindly place them in the refrigerator for 30 minutes for marination.
Once 30 minutes have passed, it's time to prepare for frying.
Get a flat container to hold the sticks and crack four eggs.
Beat the eggs thoroughly for one minute using a whisk or a fork.
To enhance the flavour of the eggs, it is recommended to sprinkle some salt and black pepper powder into the mixture.
Mix it thoroughly.
To deep fry the sticks, heat oil in a kadhai and use a large enough kadhai to accommodate them.
To coat the sticks, dip them thoroughly in the egg mixture.
After coating the food thoroughly in the egg mixture, place it into the oil while maintaining a medium flame.
Kindly repeat the process for the remaining pieces/sticks and place them in the oil.
To cook the food properly, ensure to fry one side for a minimum of 1-2 minutes before flipping it over to the other.
Remember to flip the item over and fry it on both sides to ensure even cooking. To thoroughly cook, maintain a low flame and let it simmer.
To achieve a perfect texture, fry the sticks until they are crispy on the outside and fully cooked on the inside. This process usually takes around 5-6 minutes per stick.
Enjoy it while it's hot, and pair it with spicy green chutney and mayonnaise.
