Ingredients
  

  • 2 Cups Whole Cashewnuts
  • 1 Cup Sugar
  • 1 tbsp Ghee
  • Saffron Strands (optional)
  • Silver Vark (optional)
  • Cardomom Powder

Equipment

  • 1 Mixer Grinder
  • 1 Mixing Bowl
  • 1 Frying Pan
  • 1 Strainer

Method
 

  1. Ingredients of kaju katli
  2. Pulse and Grind the cashews to a fine powder
  3. The fine powder is ready.
  4. Sieve the Cashew powder to get a fine powder
  5. Make sugar Syrup by adding 1 cup of Sugar, boil and melt the Sugar completely.
  6. Then add 3/4 cup water.
  7. Boil and melt the Sugar completely.
  8. Add saffron strands and cardamom powder
  9. Add cashew powder to the sugar syrup and cook on low flame.
  10. Add ghee and roast it until it thickens and leaves the sides.
  11. Turn off the flame and let it cool for 5-10 mins.
  12. Grease a butter paper and transfer the cashew dough and flatten it.
  13. Now transfer the cashew dough and flatten it.
  14. Keep another piece of butter paper on the top and roll it to a slightly thick paratha
  15. Now apply silver vark (it's optional) or Garnish with Chopped pistachios
  16. Cut into Diamond shapes and let it rest for 5-10 mins.
  17. Delicious Kaju Katli Recipe is ready!!!

Notes

  • Cashews should be of good quality.
  • Pulse and grind the cashews. DO NOT make a fine powder; otherwise, the katli will get sticky.
  • Make sure the same—ratio of water and sugar for better results.
  • The cashew paste is to be cooked until it leaves the plan.
