Today's recipe is simple "Phirni" recipe made with leftover rice, for this recipe we need Cooked Rice, Sugar, Milk and Cardamom Powder and some dry fruits for garnishing.Milk is boiled along with coarsely grinded rice and cooked until its reduced to half and mixed with sugar and cardamom powder and finally garnished with some dry fruits. Coarsely grind the cooked rice along with half cup milk , DO NOT make a fine pastePulse it in the mixer jar for 2-3 times
Heat the milk in a bottom vessel and let it boil
Now add coarsely grinded rice in the milk and let it boil and cook it for 10-15 mins until the milk is reduced to half.
Keep stirring it continuously until it boils
Once it starts boiling add sugar and mix it thoroughly and let it boil on low-medium flame until reduced to half of the quantity.
Add some saffron strands, this is optional. You may add this only if available.
The milk is reduced to half and cooked for 10-15 mins on low flame
Now add some cardamom powder and mix it well
Then goes in the chopped dry fruits
Mix it well and cook for another 4-5 minutes
Finally garnish it with some desi ghee and give it a good mix
Phirni is ready to be served

You may even add Khoya to make it rich and creamy or instead we can add condensed milk too to add to the richnessMilk has to be boiled and reduced to half of the quantityYou may use Basmati Rice too for enhance the taste
