Mash the onions well with palms for 1-2 mins to remove the moisture from the onions.
Now add all the ingredients – Coriander leaves, Green chillies, Ginger Curry leaves.
Add all dry masalas – Turmeric, Chilly powder, Salt & jeera.
Mix everything very well to get more moisture and mash it well.
Now add Gram Flour in portions and mix it well.
We won’t add extra water; we will mix it in the onion moisture.
Add the remaining flour and add some salt if required.
The Bajiya mixture is ready; rest it for 5 mins.
Now drop the pakodas in the hot oil and lower the flame.
Wait to stir immediately after dropping the pakodas to avoid breaking them.
Turn them around after 30 secs, occasionally turn to cook on all sides and till crispy brown.
Fry them for 3-4 mins or until done
Once done, remove them in a paper tissue to drain out excess oil
