Equipment

  • 1 Kadhai for deep frying

Ingredients
  

  • 5 No Onion sliced
  • 1 Cup Besan/ Gram Flour (200 grms)
  • Salt as per Taste
  • 1/2 tbsp Red chilly powder
  • 1/2 tbsp Turmeric Powder
  • 1/4 tbsp Jeera
  • 3 No Green Chillies Chopped
  • 1 Piece Ginger Grated
  • Chopped Coriander Leaves
  • Chopped Curry Leaves

Instructions

  • Mash the onions well with palms for 1-2 mins to remove the moisture from the onions.
  • Now add all the ingredients – Coriander leaves, Green chillies, Ginger Curry leaves.
  • Add all dry masalas – Turmeric, Chilly powder, Salt & jeera.
  • Mix everything very well to get more moisture and mash it well.
  • Now add Gram Flour in portions and mix it well.
  • We won’t add extra water; we will mix it in the onion moisture.
  • Add the remaining flour and add some salt if required.
  • The Bajiya mixture is ready; rest it for 5 mins.
  • Now drop the pakodas in the hot oil and lower the flame.
  • Wait to stir immediately after dropping the pakodas to avoid breaking them.
  • Turn them around after 30 secs, occasionally turn to cook on all sides and till crispy brown.
  • Fry them for 3-4 mins or until done
  • Once done, remove them in a paper tissue to drain out excess oil
