Recipe Medu Vada, also known as “Vada Sambhar,” is a beloved South Indian recipe. For many South Indians, there is no snack better than this. While I am not personally a big fan of Medu Vada, my entire family loves it and takes pride in our South Indian heritage.

During our childhood, when we went out shopping for festivities, Dad always took us to a Udipi Hotel. Everyone would order Medu Vada except for me, as I preferred North Indian dishes. Unfortunately, my husband shares the same taste as everyone else.

Medu Vada Recipe

Medu Vada or popularly known as "Vada Sambhar" is a south Indian's ecstasy. If you go out for a breakfast or evening snack with any of your south indian friend or family they will scroll the entire menu and finally arrive at Vada Sambhar, There is nothing beyond Medu Vada for a south indian.. I am personally not a very big fan of Medu vada but my entire family is for sure to prove we are pure south indians.

Equipment

  • Mixing Bowl
  • Mixer Grinder
  • Kadhai or Deep Frying Pan
  • Butter Paper or Plastic cover

Ingredients
  

  • 250 grams Urad Dal/Black Gram Dal Soaked in water for 4 hours
  • 1 Onion (Medium size) Finely Chopped
  • 2 Nos Green Chilies Chopped
  • 1 tsp Chopped Ginger
  • Curry Leaves Chopped (Optional)
  • 1 tsp Crushed Black Pepper
  • Salt as per taste
  • Oil for Deep Frying

  • First of all grind the soaked Urad dal in the mixer jar to a fine paste, use very little water for grinding.
    Water added should not be more that 2-3 tbsps

  • Transfer the batter to a mixing bowl,

  • Using your hands or a spatula, mix the batter continuously for 2-3 mins to smoothen it.

  • Now to the batter add chopped onions, green chillies, ginger, curry leaves, salt and black pepper powder

  • Mix all the ingredients together to form the batter

  • Now grease a piece of butter paper, and take a portion of the batter and pat it over the butter paper , use water if required. Make a small hole in between
    P.S – The reason there is a hole in between is to cook well from inside.

  • Heat enough Oil in a Kadhai and once it hot, Lower the flame and drop the medu vadas

  • Fry them on low medium flame , and keep turning them around to cook well from all sides until golden brown
    P. S – Do not turn around immediately, Turn over after 45 secs to 1 min

  • Fry them for 2-3 mins from all sides and remove them in a paper towel once golden brown

  • Medu Vadas are ready and serve it hot with Sambhar and Chutney

Notes

While grinding the urad dal ensure the water used is very less, If the water is more then the vadas wont get the shape and will become mushy
Instead of butter paper you may also use a plastic cover or even make it in your palms depending on your comfort
