Egg Roast Recipe is one of my favorite recipes because it’s so easy to make and tastes great. It’s also very healthy and nutritious. I love making it for breakfast or as an appetizer. So today we will make a dish which is very simple to make yet very delicious, Mom use to make this during school days for lunch along with bread and all my friends use to love it whenever she use to pack this for lunch.

- Deep Kadhai or Pan
Ingredients
- 2 Nos Boiled Eggs (Hard Boiled Eggs cut in halves)
- 1 Tomato Chopped
- 2 Nos Onions Finely Sliced
- 2 Nos Green Chilies
- Curry Leaves
- Chopped Coriander Leaves
- 1/4 tsp Turmeric Powder
- 1/4 tsp Garam Masala
- 1/2 tsp Red Chilly Powder
- Salt as per taste
- Oil for Cooking
Instructions

- Heat a pan and add 2 tbsp of Oil
- Once the oil is moderately hot, Add finely sliced onions
- Add curry leaves and slit green chillies and fry them until slightly golden brown
- Once the onions are slightly brown add ginger garlic paste and cook it until the raw smell goesAdd finely chopped tomatoes and add salt, cook it until soft and mushy
- Cover the lid and cook for 2-3 mins on a low flame
- After few mins the tomatoes are cooked well, lets add dry masalas like red chilly powder, turmeric powder and garam masala
- Check seasoning and add salt as/if required
- Add some water to get the saucy consistency and let it boil well
- Once it starts boiling add chopped coriander leaves and mix it well on a medium-high flame
- Now add the boiled eggs and coat it with the masala
- Cover it with a lid and cook for 1-2 minute
- After 1-2 mins check the egg roast and add some freshly chopped coriander leaves
- Spicy Tangy Egg Masala Roast is ready to be served
