Egg Masala Roast is a spicy tangy side dish which goes very well with Chapati and Bread, if you are from Mumbai try this with Pav as well, Its made with simple ingredients but taste really good and bored having the same egg omelet then do give this a try and I am sure you would love it.

Ingredients
  

  • 2 Nos Boiled Eggs (Hard Boiled Eggs cut in halves)
  • 1 Tomato Chopped
  • 2 Nos Onions Finely Sliced
  • 2 Nos Green Chilies
  • Curry Leaves
  • Chopped Coriander Leaves
  • 1/4 tsp Turmeric Powder
  • 1/4 tsp Garam Masala
  • 1/2 tsp Red Chilly Powder
  • Salt as per taste
  • Oil for Cooking

  2. Heat a pan and add 2 tbsp of Oil

  3. Once the oil is moderately hot, Add finely sliced onions

  4. Add curry leaves and slit green chillies and fry them until slightly golden brown

  5. Once the onions are slightly brown add ginger garlic paste and cook it until the raw smell goes
    Add finely chopped tomatoes and add salt, cook it until soft and mushy

  6. Cover the lid and cook for 2-3 mins on a low flame

  7. After few mins the tomatoes are cooked well, lets add dry masalas like red chilly powder, turmeric powder and garam masala

  8. Check seasoning and add salt as/if required

  9. Add some water to get the saucy consistency and let it boil well

  10. Once it starts boiling add chopped coriander leaves and mix it well on a medium-high flame

  11. Now add the boiled eggs and coat it with the masala

  12. Cover it with a lid and cook for 1-2 minute

  13. After 1-2 mins check the egg roast and add some freshly chopped coriander leaves
