Equipment
- Mixing Bowl
- Pressure Cooker or Microwave Oven
- Cake Tin
- Electric Whisker or Manual Whisker
- Measuring Cups
Ingredients
- 1/4 Cup Tooti Frooti
- 1/4 Cup Black Raisins
- 1/4 Cup Brown Raisins
- 1/2 Cup Dates Chopped
- 1/4 Cup Cherries
- 1 Cup Fresh Orange Juice
- 1/2 Cup Cashewnuts Chopped
- 1/2 Cup Sugar
- 1 Cup Hot water
- 1/2 tbsp Nutmeg
- 1 tsp Cardamom Powder
- 1/2 tbsp Cinnamon Powder
- 2-3 Nos Cloves
- 3 Nos Eggs
- a pinch of salt
- 1/2 Cup Powdered Sugar
- 1/2 Cup Refined Oil or Butter
- Orange Peel
- 1 tbsp Vanilla Essence
- 1.5 Cup Maida/All Purpose flour
- 1 tbsp Baking Powder
- 1 tsp Baking Soda
Instructions
Step 1 – Soaking Dried Fruits in Orange Juice
- Ingredients
- Take a mixing bowl and add orange Juice, and all dry fruits except for Cashews
- Mix and Soak them in the orange juice for atleast 30 mins
Step 2 – Caramalised Sugar Water
- Take a heavy bottom pan and add 1/2 Cup Sugar and let it melt on a low flame
- Do not add water now, Let it melt until coffee brown in color – Stir continuosly P.S – Cake gets the rich golden brown color due to this process. Also make sure its not burnt as it will lead to bitter taste in the cake
- As soon as the sugar turns coffee brown in color add 1 cup boiling water to it (Keep the flame to the lowest and be careful while adding water)
- Let it boil on high flame, we need to reduce it to 1/2 cup, it will take around 10-12 mins for this entire process
- The caramalised sugar water is ready , Turn off the heat and let it cool to room temperature
Step 3 – Cake Spice Mix
- For Spice mix we need 1/2 tbsp Nutmeg, 1 tsp Cardomom Powder and 1/2 tbsp Cinnamon PowderI am grating a piece of Nutmeg
- To the grated Nutmeg I am adding Cinnamon Powder and Cardomom Powder
Step 4 – Cake Batter
- Now take a mixing bowl and 3 Eggs and seperate egg white in a big bowl and egg yolk in another bowl
- Beat the Egg whites using a electric whisker until its frothy and creamy, it takes around 3-4 minutes
- Add a pinch of salt while whisking it
- The whipped egg whites are ready now
- Take a big mixing bowl and add egg yolks and beat it well
- Now add powdered sugar in portion and whisk it along with the egg yolk
- Now add Oil or Butter in portion and whisk it together
- Now take an orange peel and just grate the orange zest in the batter, gently grate it as we only need the orange part for flavour
- Along with it add 1 tbsp Vanilla Essense and then using a whisker beat it well
- Now add the caramalised sugar water (room temperature) into the batter in portions
- Beat all the ingredients well into the batter
- Take a strainer and add Maida, Baking Powder, Baking Soda & Spice Mix
- Strain and add the mixture to the batter
- Gently fold it in the same direction, make sure there are no lumps
- Now add the soaked dried fruits in the cake batter and fold it again
- Then goes in the chopped cashew nuts
- Finally add Egg white and keep folding the batter
- Grease a cake tin and keep a butter paper over it to avoid sticking at the bottom
- Transfer the batter to cake tin ,Pre Heat the oven for 5 mins at 180C
- Tap it once to remove any gaps or air bubbles
- Garnish it with some cashews
Step 5 – Baking Cake
- Place it in the Preheated Oven and cook it for 40 mins at 180CWithout Oven – Place a stand or some sand/salt in a cooker and keep the cake tin in the cooker , Close the cooker without rubber ring and whistle and let it cook/bake for 45 mins
- After 40 mins, Check the cake and remove it from Oven
- Use a knife or a skewer stick to check if the cake is baked from inside
- Delicious Plum Cake is ready to eat
