  • 250 grms Penne Pasta
  • 2 tbsp Garlic Chopped
  • 1 tbsp Red Chilly Flakes
  • 1 tsp Italian Seasoning
  • ½ tbsp Black Pepper Powder
  • ¼ Cup Finely diced Carrots

Equipment

  • Sauce Pan
  • Strainer
  • bottom vessel
  • whisker

Method

  1. Ingredients
  2. Take a bottom vessels and boil around 1.5 litres of water, Water should be 5 times of the pasta quantity
  3. Keep it on a high flame and add some salt around 1 tsp
  4. Now add 1 tbsp Oil to the water, this is avoid stickiness and extra starch in pasta
  5. Once the water starts boiling, Add pasta to the boiling water
  6. Stir it well to the pasta to avoid sticking to each other or bottom of the vessel
  7. Let it boil on a high flame for 2-3 mins, Do not over cook the pasta as it will get mushy, Keep string in between and cook for 2-3 mins
  8. After 3 mins the pasta seems to be cooked, Check the pasta if its almost done (do not overcook) about 80-0% done then we can turn off the flame. If you can cut it easily with the knife then its cooked
  9. Turn off the flame and immediately drain it over a strainer
  10. After removing it on a strainer, immediately pour room temperature water over it to stop cooking or sticking to each other
  11. Now Heat a Saucepan or a kadhai, Pour over 2 tbsp of Oil
  12. Add around 1 tbsp of Chopped Garlic once the oil is hot
  13. Fry the chopped garlic on high flame, do not burn, Stir continuously
  14. Then add the finely diced carrot, Stir it on a high flame for 30-45 secs
  15. Once the carrots are fried then we can add sweetcorn and fry it well too on a high flame only stirring it continuously
  16. The reason we are frying them separately is due to different cooking capacities.
Now after frying sweet corns for 30 – 45 secs on high flame we will add the bell peppers
  17. The veggies are half cooked now and we can remove them off the flame
  18. Take another sauce pan to make white sauce for the pasta, keep it on the low flame only and in the sauce pan add 3 tbsp of butter
  19. Once the butter is melted add chopped garlic and fry it once, Make sure you keep it on low flame.
  20. Now use a whisker as we add all purpose flour in portion to the saucepan
  21. Keep stirring continuously with a whisker, with the help of whisker we can avoid lump formation in the sauce
  22. Now pour in milk in parts, Not all together in portions only and whisk it well to avoid lumps
  23. Once the sauce is ready add red chilly flakes, Italian seasoning and black pepper powder to the sauce
  24. Mix it well with the sauce and get it to a boil, and add salt as required
  25. Once it starts boiling well add half portion of cheese in the sauce
  26. Mix it continually until the cheese melts completely in the sauce
  27. Now add all the fried veggies to the sauce and give it a good mix
  28. Add little water to get a smooth consistency if the sauce is getting too thick
  29. Once the sauce starts boiling, it’s time to add the boiled pasta
  30. Mix it really well along with the sauce
  31. Add some water in the sauce get too thick to get the right consistency
Now add it with some red chilly flakes
  32. Spread some cheese generously over the pasta
  33. Mix it well And it’s time to serve it hot!! With some more cheese

Notes

  • Cook Pasta only for 2-3 minutes on high flame, Do not overcook and pour water over the pasta once immediately after straining it
  • While preparing sauce keep the gas stove on a very low flame, and keep continuously stirring the sauce to avoid lumps specially while adding flour and milk.
  • Use processed cheese in the sauce and not mozzarella cheese.
