Ingredients
  

  • 1 cup chopped spring onion
  • 1 cup cabbage
  • 1 cup chopped beans
  • 1 cup chopped carrot
  • 1 cup onion (Spring Onion)
  • 1 Cup Chopped Capsicum
  • 1 tbsp chopped Ginger
  • 1 tbsp chopped green chillies
  • 1 tbsp chopped garlic
  • 1 tbsp red chilly flakes (optional)
  • 2 tbsp soya sauce
  • 1 tbsp vinegar
  • 1/2 tbsp black pepper powder
  • 1 tbsp green chilly sauce

  • 1 bottom vessel
  • 1 Strainer
  • 1 Kadhai

Method
 

  1. Ingredients of veg fried rice recipe
  2. Take enough water, about 3 litres, in a bottom vessel.
  3. Add salt and let it bail.
  4. Once the water starts boiling, add the basmati rice and let it cook on a high flame for about 5-7 mins.
  5. After 7-10 mins, the rice is almost cooked, about 90%
  6. Drain the rice in a Strainer.
  7. Pour normal water over it to remove extra starch to avoid sticking to the rice
  8. Spread the rice over a flat plate and pour about a tbsp of oil.
  9. Take a bottom Kadao and pour some oil; keep on a high flame.
  10. Add chopped ginger, garlic and green chillies and fry them well.
  11. Now add onions & other veggies and fry for 1 min on high flame.
  12. Fry them until half-cooked to keep them crunchy.
  13. Now add rice to the fried veggies.
  14. Along with rice, add all sauces, salt and black pepper powder.
  15. Mix and stir the rice using two staples
  16. Add chilly flakes (optional)
  17. Mix everything properly
  18. Veg fried rice is ready. Serve it hot!!!

Notes

  • Rice should be partially cooked; add washed and soaked Basmati Rice in boiling water and cooked on high flame for 5-7 mins.
  • Add Salt Oil and Lemon Juice to avoid sticking to Rice.
  • Drain the Rice in a strainer and run it through running water to remove the extra starch.
  • Add some Oil over the cooked Rice to avoid sticking.
  • While making the fried Rice saute the veggies on high flame to get a smoky flavour but ensure you stir it continuously to avoid burning.
  • Taste best when served hot.
