Ingredients
To start with, we need to first blanch the tomatoes, for this I have already kept some water for boiling around 1 litre water in a bottom vesselNow make cross cuts at the bottom of the tomatoesTip - Making these cuts helps in removing the tomato skin easily, it comes out on its own. Drop the tomatoes in the boiling water and cover it with a lid and cook for 5mins on high flame
After 5 mins, the tomatoes are cooked and the skin has already torn off, Remove them in a plate and let it cool
Once tomatoes are at room temperature, Remove the skin, cut them and remove the seeds
Now add the blanched tomatoes without seeds in a blender or a chopper and blend it or pulse it 3-4 times for a coarse puree , we don't need a fine paste for this sauce
Now lets start with Pasta recipe, Heat a pan and add 1 tbsp Butter and 1 tbsp Olive Oil
Add chopped 1 tbsp garlic and roast it until raw smell goes on a low flame, dont make it brown just till a raw smell goes we can fry them
Now add chopped onions and fry them until translucentMix it well Once the onions are translucent add red chilly flakes, black pepper powder and italian seasoning. Stir them for a minute
Mix it well
Now add tomato puree and cook it on a low flame for a while
Mix it well
Add some salt as per taste, Pasta was cooked with salt so add salt as required
Mix it well
Then goes in 1 tbsp tomato ketchup, mix it well and the red sauce is ready
Add diced capsicum and toss it, though this is optional, You may even add broccoli, carrots, sweet corn etc if required as per your choice.Usually red sauce pasta or Penne Arrabiata is made without any veggies, the pasta is just tossed in the red sauce but we can add veggies as per choice Add around 1/2 cup water to get a saucy consistency, and let it boil. Check seasoning, if required add salt Add chopped Parsley or instead you may even add chopped coriander leaves
Now add the boiled penne pasta and toss it well for 1-2 mins untill the sauce is well coated
Mix it well
Finally add some grated cheese and mix it well
Serve it hot and garnish with lots grated cheese and parsley
