Paya Soup Ingredients
Clean the trotters with salt and vinegar water
To remove any hair or dirt from the trotters, Use wheat flour.
Coat the wheat flour to the trotters and let it rest for 15-20 mins.
After 20 mins take each trotters and start massaging it gently to remove any dirt or hair from trotters.
It might take about 10-15 mins, this is the best way to clean the trotters.
Now wash it clean under running water and keep it aside.
In a pressure cooker or a botton vessel heat 2-3 tbsp of Oil and add some whole spices - Star Anise, Cinnamon sticks, Black Cardomom, Black pepper, Cloves and bay leaf etc (as per choice and taste).
Add finely chopped Onions and fry them until golden brown on low-med flame.
Add some salt as per taste, Salt helps in caramelizing the onions faster.
Saute the Onions until golden brown on low-med flame.
Add 1 tbsp Ginger Garlic and Chilly Paste.
Saute them together until aromatic on low-med flame.
Add all the dry spices - 1 tbsp Red Chilly Powder,1 tsp Coriander Powder,1/2 tsp Cumin Powder,1/2 tsp Garam masala,1/2 tsp Turmeric Powder & 1/2 tsp Crushed Black Pepper Powder.
Saute the masala until aromatic on low-med flame.
Add 2 tbsp of Curd/Yoghurt and mix it well (This adds tangyness to the soup).
Saute it well altogether, Mixing it continuously with the masala on low-med flame.
Now add some freshy chopped coriander leaves.
And finally goes in the cleaned Mutton Trotters.
Saute the Trotters in the masala on low-med flame.
Cover and Cook for 2-3 mins on medium flame.
Now add 4-5 cups of Boiling water.
Cover and pressure cook the Mutton Trotters for 45 mins (15 mins on high flame and 30 mins on low flame).
Once done and the cooker releases all air, Open the Cooker and boil it for 2-3 mins.
Garnish it with some chopped coriander leaves and mint leaves and serve it hot with a squeeze of lemon juice on top.
