Gujiya is a North India Sweet Delicacy, Made with Maida flour and filled with delightful Khoya and dry fruits filling.The dumpling is then dipped in the sugar syrup for a sweet coating. Specially made during Holi Festival.It is similar to Karanji made in Maharashtra which has a coconut filling and made specially during Diwali.

Ingredients
  

  • 1 Cup Maida or All Purpose Flour
  • 3/4 Cup Sugar
  • 1/2 tsp Cardamom Powder
  • Pinch of Salt
  • 150 grams Khoya
  • 1/4 Cup Dried Fruits - Cashews & Badam
  • 1/4 Cup Powered Sugar
  • Few strands of saffron
  • 4 tbsp Ghee
  • 3 tbsp Dessicated Coconut

Method

  2. In a mixing bowl add all purpose flour, a pinch of salt and mix it well

  3. Then add ghee and mix it thoroughly

  4. The flour should bind together on pressing, if not then add some more ghee and mix thoroughly

  5. Now add some water and knead a stiff dough, the dough should not be sticky or soft like chapati dough

  6. The dough is ready , Cover it and Rest it for 30 mins

  7. Take a non stick pan and keeping it on a low flame roast the Khoya by stirring it continuously
    Roast it until the color changes as shown below

  8. In a pan dry roast desiccated coconut for a while until it gets aromatic and changes the color slightly
    Transfer it to a plate once roasted

  9. In the same pan add some ghee and roast the dried fruits

  10. Now lets make the sugar syrup - In a pan add 3/4 cup of sugar and add equal quantity of water

  11. Mix the sugar well and let it melt completely and let it boil

  12. Once it starts boiling add saffron strands and some cardamom powder and mix it well and let it boil

  13. Boil it and let it reach a sticky consistency like honey, We don't need string consistency for this syrup

  14. Mash the roasted khoya and mix it well to remove the lumps

  15. Add roasted dry fruits and desiccated coconut in the khoya

  16. Add powdered sugar to the mixture as per taste and mix it well

  17. Finally add some cardamom powder

  18. The Khoya filling is ready

  19. Now make lemon size equal portions of the dough

  20. Now roll a ball to form a puri

  21. Place 2 spoons of filling in one side of the puri

  22. Apply some water on the edge of the other side

  23. Close it from one side to another and press it gently from all sides

  24. Now design the edges by pressing and folding the corners

  25. One is done, lets make the rest similar way

  26. Heat enough oil for deep frying

  27. And fry the Gujiya until golden brown

  28. Once the Gujiya are fried well, remove them from the hot oil and add them in warm syrup

  29. Drop the fried Gujiya in warm sugar syrup
    P.S - Don't drop it in hot syrup , the sugar syrup should be warm and not hot otherwise it will become soggy

Notes

While making guijiya, if you are unable to design its edges you may just press it with a fork too
Make sure the sugar syrup is just warm while dropping the fried Gujiyas in them , If you drop gujiyas in hot sugar syrup then they will turn soggy
