- In a mixing bowl add all purpose flour, a pinch of salt and mix it well

- Then add ghee and mix it thoroughly

- The flour should bind together on pressing, if not then add some more ghee and mix thoroughly

- Now add some water and knead a stiff dough, the dough should not be sticky or soft like chapati doughAdd water in portions

- The dough is ready , Cover it and Rest it for 30 mins

- Take a non stick pan and keeping it on a low flame roast the Khoya by stirring it continuouslyRoast it until the color changes as shown below

- In a pan dry roast desiccated coconut for a while until it gets aromatic and changes the color slightlyTransfer it to a plate once roasted

- In the same pan add some ghee and roast the dried fruits

- Now lets make the sugar syrup - In a pan add 3/4 cup of sugar and add equal quantity of water

- Mix the sugar well and let it melt completely and let it boil

- Once it starts boiling add saffron strands and some cardamom powder and mix it well and let it boil

- Boil it and let it reach a sticky consistency like honey, We don't need string consistency for this syrup

- Mash the roasted khoya and mix it well to remove the lumps

- Add roasted dry fruits and desiccated coconut in the khoya

- Add powdered sugar to the mixture as per taste and mix it well

- Finally add some cardamom powder

- The Khoya filling is ready

- Now make lemon size equal portions of the dough

- Now roll a ball to form a puri

- Place 2 spoons of filling in one side of the puri

- Apply some water on the edge of the other side

- Close it from one side to another and press it gently from all sides

- Now design the edges by pressing and folding the corners

- One is done, lets make the rest similar way

- Heat enough oil for deep frying

- And fry the Gujiya until golden brown

- Once the Gujiya are fried well, remove them from the hot oil and add them in warm syrup

- Drop the fried Gujiya in warm sugar syrup P.S - Don't drop it in hot syrup , the sugar syrup should be warm and not hot otherwise it will become soggy

Notes
While making guijiya, if you are unable to design its edges you may just press it with a fork too
Make sure the sugar syrup is just warm while dropping the fried Gujiyas in them , If you drop gujiyas in hot sugar syrup then they will turn soggy
