Ingredients
8-10 Skewer sticks - wooden/ metal
There are two marination process while making Chicken tikka. Lets start with the first marinationMarination 1 - Marinate the chicken pieces with 1 tbsp Kashmiri Red Chilly Powder, Turmeric , Salt and Lemon Juice Mix all the ingredient together with the chicken pieces and
Marinate it for 15-20 mins
Now lets start the second Marination ProcessTake a mixing bowl - Add Curd, 1/2 tbsp Kashmiri Chilly Powder, Garam Masala and Cumin Powder Now add 2 tbsp Oil , 1 tbsp ginger garlic paste, and crushed kasuri methi
Then we will add 2 tbsp roasted gram flour, just roast it on a pan with the lowest flame until aromatic and salt as per taste (we have already added salt during first marination so we need very little salt for second marination)
Mix all the ingredients well, use a whisker or a fork so there are no lumps in the marination since we have added curd and gram flour in it.
Now add the marinated chicken in the second Marination
Mix them together very well, use your hands to mix it together so the chicken is well coated in the Marination
Marinate this for another 30-45 mins , you may marinate it for longer if you have time
After 45 mins add some chat masala and mix it together, also check the seasoning and add some salt is required
Mix them together very well
Take one skewer stick, Pierce in 2-3 pieces of marinated chicken pieces, If you are using metal one then you can pierce in 5-6 piece in one stick
Do this for all the marinated chicken pieces
Now lets roast it on naked flame for 1 minute, Turn on the gas stove and place each stick and keep rotating over the naked flame to get a burnt look
Heat a frying pan , add about 1-2 tbsp Oil/GheeFry each sticks for about 4-5 mins or until done/cooked on low flame Turn it on other sides occasionally to cook from all sides and fry them on low flame
Chicken tikka is ready to be served with green chutney and onion rings
