Ingredients
First of all, make some slits on the drumsticks so the marination entersinside the chicken pieces and makes it more juicy and flavourful. Make sure the chicken pieces are pat dry before marination
For first marination , Add 1 tbsp GingerGarlic and Chilly Paste, Turmeric powder, Salt and lemon juice and mix it well
Let it rest for 30 mins, You can even refrigerate it if required. Marination makes the chicken tender and juicy.
For second marination – Take a mixing bowl and add Curd (thick or hung curd), roasted gram flour, 1 tbsp Cashew paste, ½ tbsp. Ginger Garlic and Chillipaste
Add Cumin Powder, Garam Masala, Black Pepper Powder, Turmeric powder andChaat Masala powder, Kasuri Methi, Salt and Lemon Juice (Since we have already added salt in the firstmarination we will add little salt here)
Now add two tbsp of Oil, You can even take mustard oil if like a strong flavour and give a nice mix
Finally add marinated chicken drumsticks to this second marination pasteand mix it thoroughly so the masala is well coated with the Chicken pieces.Rest the chicken with second marination for 2 hours or for best results overnight in the fridge. (In case of lack of time you can even marinateit for 30 mins) After two hours of marination, add some chopped mint and coriander leaves and mix it well
Now take a frying pan and add about 1-2 tbsp of Oil and Shallow fry the Chicken Drumsticks on low-med flame
Let it cook on low-med flame for about 14-15 mins on each sides and turn them in intervals.
After 20-30 mins you can see the chicken drumsticks are cooked and fried well
Now place them on an open flame using a grill to give them a burnt and smoky flavour like tandoor. Grease the tray/grill with some Oil/Butter/Ghee
Roast the fried chicken in the open flame for 3-4 mins , Apply butter if required to give it a tandoor like smoky and burnt look
