Ingredients
- 1 Kg Mixed Veggies – Raw Banana, Ivy Gourd, Cowpeas Beans, Cluster beans, Arbi, Carrot, Yam, white pumpkin cut into wedges
- 1/2 Cup Curd
- 1 Cup Coconut Freshly grated
- 3 Nos Green Chillies
- a bunch of curry leaves
- 1/4 tsp Cumin Seeds
- Salt as per taste
- 2 tbsp Coconut Oil
- 1/2 tsp Turmeric Powder

- Take a bottom vessel and add all veggies together, to this then add salt, turmeric powder, curry leaves and green chilies
- Add about half cup of water and let it boil on high flame for 5mins and then lower the flame and let it cook until the veggies are cooked to prefectP.S – Do not overcook the veggies, the veggies should be mushy
- Toss the vegetables occassionally by holding the handles of the kadhai, Do not use a spatula as it might make break the vegetables. We prefer keeping the veggies in shape for the Aviyal recipe Some veggies will release its own water, thats why we need to add only half cup of water
- After the veggies are half cooked add the drumsticks as it takes very less time to cook and toss it again
- Cover and cook for another 10 mins or until the veggies are cooked
- Check the veggies after a while and if this is done you can turn off the flame In case the veggies are yet to be cooked,you may add some hot water and cook the veggies until done
- In a mixer jar add freshly grated coconut, green chillies, curry leaves and cumin seedsDo not add water while grinding the coconut and just pulse it 2-3 times (coarsely grinded)
- Now add the grinded coconut into the veggies
- Mix it gently with the veggies and turn on the heat and keep it on a low flame
- Add 4-5 tbsp of Curd and mix it gentle , check the seasoning and add some salt if required
- Serve it with Steam Rice and Sambhar
