Back in college, there was a small cart nearby that served the most amazing pav bhaji. The owner did everything on that little cart, from chopping and cooking the vegetables, to mashing them, adding spice mix, and cooking it all in loads of butter. Then he would serve it up, topping it with another chunk of butter and handing you a butter-soaked pav alongside a plate full of spicy, buttery bhaji. We couldn’t wait to dive in, adding some lemon juice and chopped onions for extra flavor. Just thinking about it now makes me drool! 🤤🤤

Pav Bhaji is a popular street food in India that is loved by many. It is a delicious and hearty dish that is easy to make and can be enjoyed by everyone. To make Pav Bhaji, you will need a few simple ingredients such as potatoes, tomatoes, onions, peas, and spices.

Starting up with buttering the saucepan
To begin, heat up a Kadhai and then add 2 tablespoons of oil and 1 tablespoon of butter.
Sauteing Onions
To the pan, add onions that have been finely chopped. Fry them until they become translucent and have a slightly pinkish hue.
Sauteing Ginger Garlic Paste
Next, add half a tablespoon of ginger garlic paste and fry the mixture until the raw aroma dissipates.
Cooking Tomatoes
Next, finely chop some tomatoes and add them to the pan. Cook them until they become soft and mushy, adding a pinch of salt to speed up the process. Once the tomatoes have softened, use a masher to thoroughly mash them.

Next, add red chili powder, turmeric powder, and pav bhaji masala.

Thoroughly combine all of the ingredients and mash them together.

Next, transfer the cooked vegetables to a mixing bowl and proceed to mash them thoroughly until they are well blended.

Next, combine the mashed vegetables with the masala and mashed potatoes, ensuring that they are thoroughly mixed together.

To achieve a smooth consistency, mash all of the vegetables using a masher.

To achieve the desired texture, add water and mash the mixture again.
Adding some nature color and taste
Add 2-3 tablespoons of beetroot juice and amchur powder to the mixture and mix thoroughly.
Buttering it up
To make a smooth blend, mix all the vegetables together and use a masher. Then, add some butter to the mixture.
Garnishing
Finally garnish it with chopped coriander leaves and butter and mix it well.
Roasting Pav
The bhaji is ready. Now it’s time to roast the pav. Heat up a tawa (griddle), apply butter on the pav, and roast it on both sides until it is golden brown.

4-5 Nos Boiled Potatoes Mashed
6 Nos Tomatoes (Medium Sized) Finely Chopped
300 grams Mix veggie (Green Peas, Cauliflower, Bottle gourd) Cooked for 2-3 whistles with salt
1 No Onion (Large) Finely Chopped
1/2 Cup Butter
Oil for Cooking
1/4 Cup Chopped Capsicum Optional
Chopped Coriander Leaves
1/2 tbsp Dry mango powder
1/2 tbsp Turmeric powder
Salt as per taste
2 tbsp Pav Bhaji Masala
1 tsp Red Chilly Powder
1 tbsp Ginger garlic paste
3 tbsp Beetroot Juice (Optional for Color)
