How to make Vegetable Stew Recipe at home?

Equipment
- 1 Pressure Cooker
Ingredients
- 1 No Sliced Onion
- 2 No Slit Green Chillies
- Curry leaves
- 1/2 tbsp Chopped Ginger
- Salt as per taste
- 1 Cup Thin Coconut Milk
- 1/4 Cup Thick Coconut Milk
Instructions
- Ingredients of vegetable stew
- In a cooker and add 1 tbsp of coconut Oil/ Vegetable Oil.
- Add Sliced onions and fry them until pinkish or translucent
- Then add sliced green chillies and curry leaves.
- Add ½ tsp of chopped ginger.
- Now add all mixed veggies.
- Stir fry it for a minute.
- Add half a cup of water and the same salt as per taste
- Cover it with a lid and let it cook for 1-2 whistles.
- Once the whistles are all gone, and the cooking is ready to open
- Veggies are cooked to perfection, Do not overcook
- Now add thin coconut milk and stir continuously until it boils.
- Cook the veggies for 1-2 mins on low flame along with coconut milk.
- Add thick coconut milk.
- Finally, garnish it with some curry leaves
- Mix it well
- Vegetable stew is ready to be served.

- Coconut milk can be make with half grated coconut at home …First milk is by adding 1/4 cup water and grinding the coconut coarsely and then squeezing in the water thru a strainer and then add the residue of the first milk is grinded coarsely (pulse 3-4 times ) with 1/2 or 3/4 cup water and then squeezing in the second milk thru a strainer
- Second milk can be boiled but after adding the first thick milk turn off the flame and garnish with some raw coconut oil for added flavour (you can skip this step if you are not fond of coconut oil)
